lettuce wraps


delicious, crunchy, and easy!

i made this recipe up as i went along. you can do the same thing!

ingredients
  • 1 zucchini, diced
  • 1 block tempeh, steamed then diced
  • 4 cloves garlic, minced
  • 1 TBL minced ginger
  • 1/2 red bell pepper, diced
  • 5 cremini mushrooms, chopped
  • 1 green onion, diced
  • 1/3 cup teriyaki sauce (i added tsp or so of cornstarch because the sauce was super liquidy)
  • head of iceberg lettuce

directions
  1. heat a TBL or so of peanut oil in a skillet. add garlic and ginger. stir until fragrant.
  2. add tempeh and cook for about 2 minutes.
  3. add zucchini, pepper, and mushrooms. cook until begins to get soft.
  4. add teriyaki sauce and cook until mixture is not liquidy. if it gets too dry, add some water.
  5. mix in the green onion.
  6. serve with iceberg lettuce pieces. put a couple of TBL on lettuce pieces and wrap up. enjoy!
