delicious, crunchy, and easy!
i made this recipe up as i went along. you can do the same thing!
ingredients
- 1 zucchini, diced
- 1 block tempeh, steamed then diced
- 4 cloves garlic, minced
- 1 TBL minced ginger
- 1/2 red bell pepper, diced
- 5 cremini mushrooms, chopped
- 1 green onion, diced
- 1/3 cup teriyaki sauce (i added tsp or so of cornstarch because the sauce was super liquidy)
- head of iceberg lettuce
directions
- heat a TBL or so of peanut oil in a skillet. add garlic and ginger. stir until fragrant.
- add tempeh and cook for about 2 minutes.
- add zucchini, pepper, and mushrooms. cook until begins to get soft.
- add teriyaki sauce and cook until mixture is not liquidy. if it gets too dry, add some water.
- mix in the green onion.
- serve with iceberg lettuce pieces. put a couple of TBL on lettuce pieces and wrap up. enjoy!
